I love matcha!! I have never attempted matcha pancakes, however this sounds amazing. I really like how you focus in on the process of making matcha. From what I have read over the years making matcha is quite an art and intended to be quite a mindful process.
On my next walk I will use your idea of counting the birds and flowers!!
