I absolutely love this post! Now that I have a few days off, I've gotten more into cooking and baking in my free time 👩🍳 But once uni and work starts up again in a few days, I'll be back to not having much time to prepare home-made meals, so this is a nice reminder for me to start thinking about how I can meal-prep on Sundays for the week!
I loooove rice/sushi bowls, but I've never really made them at home myself - I'll definitely give your ideas a try sometime this week 🍚 And the idea of a charcuterie board is so smart too 🍱
Some things I like to do:
- I have a big sweet-tooth, so I love pre-dicing up some strawberries and keeping them and other berries in the fridge to top up my breakfasts and desserts! I really like overnight oats and chia pudding in my mornings since I just need to take them out of the fridge! The night before, I mix around 1/2 cup of oats (for overnight oats) or 3 tablespoons of chia seeds (for chia pudding) together with some almond milk into a jar/glass, and the next morning, I add some greek yoghurt, berries, and almond butter or jam to sweeten it up!
- Making one-pot or one-pan dishes (E.g., soups/stews, stir fries, pasta) - these only require putting all ingredients in a single pot/pan before cooking it in the oven, slow cooker, or on stovetop! They're so quick and leave much less dishes to clean 🤗
- Making extra servings whenever I have more time/energy to cook, so I can have leftovers for the next few days
- Using my microwave oven - it can be used as an oven, toaster, air fryer, microwave, etc., plus doesn't require as much effort as other dishes!
For recipes, I've been liking this website - Nutritious Delights 🤤 It has really simple, healthy and tasty recipes, with so many vegan and gluten-free options/alternatives
