After my first ever pet (rabbit) died, I adopted a cat from the pound because I felt looking after after animals was something I enjoyed and part of my self-care. When we brought the cat home he just didn't seem to adjust and was aggressive all the time, not the loving relationship I thought I would have. I gave it several months of adjusting before I realised I wasn't happy and neither was the cat. We'd taken him to the vet but that didn't help either. In the end I decided I didn't want to take him back to the shelter but that I would rehome him myself. I put up ads on Facebook and Gumtree and a male answered. The shift in my cats attitude was a complete 180, it turned out he felt more comfortable with

males. Of course it was disheartening to give him away no matter how many scratches I got from him but he was in a happier environment and that's all I wanted. After another several months we adopted a kitten and she is absolutely lovely (Her name is Custard 😄). 
I can completely understand how overwhelmed you must feel because a lot of responsibility goes into pet ownership but like the others have already said maybe give it an adjustment period. You mention you move around a lot and there are options in terms of having pet-sitters and boarding houses. The great things about kittens is that you can train them from the outset and they are quick to learn your routine. I would recommend keeping note of whether the kitten is helping or hindering your mental health and go from there. I know you wouldn't want to take it back to the shelter so you can always rehome them like I did.
