I completely understand your situation. Nowadays everyone has different schedules with uni, work and other extracurricular activities, so it becomes extremely tough to find a time when everyones free to hang out. Especially organising specific activities is even harder as you have to think about the timings the activity is offered and ensure that everyone is available for those times. In this case I think it is best to communicate with your friends. Give them a call to catch up about what's been happening in your lives. I find that whenever I haven't met my friends in a long time we just call each other or FaceTime to get regular updates. I like doing this as I feel like I get to spend quality time with my friends rather than doing an activity where I might not get a chance to speak with them properly. You can also meet up with your friends more casually like going to their house or inviting them over to your house and watching a movie or cooking a nice meal. Or you could go out with them to have lunch or dinner and just spend the time talking and catching up with each other.
